Yields 10 servings
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Put all the components inside a saucepan, heat until it reaches a gentle boil, agitating so the sugar melts. Then, turn off the stove and leave to cool entirely. Decant into an sealable bottle, close it and refrigerate it in the fridge, it can be stored for about a month.
Preparing the Batch Mix: Mix all the liquids in a sizeable container, allow it to infuse for one hour, then strain best through a fine cloth, so it's fully clarified.
When ready to serve: Measure 85ml of your premix into your stirring glass containing ice, and stir gently for a minute to chill. Pour into an chilled martini glass or equivalent, decorate with some cranberries and complete it by giving it a brief mist with the mandarin essence above the glass.
